Vanilla caviar is the name that we give to the seeds that are found in vanilla pods. This is generally regarded as the part that contains the highest vanillin (vanilla flavours components ) from the pods.
Typically this is another labour intensive process where the pods are split open by hand and the seeds scraped of by hand. These pearls of vanilla look like miniature caviar and hence the name. They contain such a high amount of vanillin that half a gram contains the equivalent of the majority of the flavour in a pod.
This is the most concentrated form of vanilla that you can get with any processing of the bean and it comes at a very economic price when you calculate the equivalent number of pods in one jar (40 pods!!)
The stock of this product does not last long and is very seasonal.
